1. The terrifying phenomenon known as "container rain (condensation)"
Ships carrying coffee beans travel through tropical regions directly under the equator on their way to Japan. During this journey, a phenomenon called "container rain" occurs inside the containers.

Drastic temperature changes: Intense direct sunlight during the day heats the inside of the container, but it rapidly cools down at night or due to the ocean's temperature.

Condensation: Moisture in the air inside the container forms droplets on the cooled ceiling and walls, raining down onto the coffee beans.
This moisture breathes new life into the supposedly dry green beans, triggering an explosive proliferation of mold.
2. "Breathing" green beans and humidity
Before roasting, green coffee beans are still "alive." This means they are highly hygroscopic, absorbing and releasing moisture in response to their environment.

Accumulation of humidity: The green beans absorb humidity from the sea air and moisture generated by temperature fluctuations inside the container like a sponge.

The jute bag blind spot: While common "jute bags" are breathable, they also allow external humidity to pass through easily and, once wet, take a long time to dry. This becomes a hotbed for mold.
3. Sustained "high temperature and humidity" from crossing the equator
Mold is most active in environments with temperatures between 25°C and 35°C and humidity above 70%.
On the route to Japan, when passing near the equator, this "ideal habitat for mold" condition persists for several weeks to over a month. This prolonged stress increases the risk of producing invisible mycotoxins.
