This crucial process, which supports both deliciousness and safety, is hand-picking (sorting out defective beans).

Why Hand-Picking Protects Coffee Quality

Hand-picking is the process of manually sorting green coffee beans that arrive from overseas, one by one, before roasting to remove defective beans and foreign objects.

We mainly remove the following:

• Defective beans: Insect-damaged beans, blackened beans, fermented beans, and the most dangerous of all, moldy beans.

• Foreign objects: Stones, wood fragments, and occasionally even rare finds like bolts can be mixed in.

Moldy beans, in particular, must be thoroughly removed as they significantly impair flavor and can have adverse health effects.

Why is hand-picking important?

This painstaking work is what supports the quality of Gokujo Kabi-nashi Coffee.

1. Ensuring Safety: If foreign objects like stones or metal are ground in the mill, they can chip the blades or cause malfunctions. It also prevents health hazards from moldy beans.

2. Improving Flavor: Defective beans (such as fermented or unripe beans) cause unpleasant off-flavors and bitterness. By removing these, we can maximize the coffee's inherent clear and rich aroma.

The tedious and difficult process of hand-picking

While coffee roasting takes only about 15-20 minutes, the time spent hand-picking is incomparable.

Especially with inexpensive or low-quality beans, it can take over an hour to sort 5kg of green beans. This is a challenging task that requires patience and concentration.
