【The Heart of the Mill】Coffee Grinder Burrs Compared: Ceramic vs. Metal – What’s the Taste Difference?

Thank you always for your support!
I'm Kamei, owner of Gokujou Kabi Nashi Coffee.

Last time, I introduced manual and electric grinders, but the truth is that the performance of a coffee grinder and the taste it produces are determined by the material of its "blades."

This time, I will thoroughly explain the characteristics, advantages, and disadvantages of the ceramic and metal blades commonly used in grinders. Please read to the end to help you choose the right grinder.

1. Ceramic Blades: Easy Maintenance is the Key

Ceramic blades are mainly used in manual grinders.

Advantages

  • Easy to clean: The biggest advantage is that they can be washed completely with water. Unlike metal, there's no need to worry about rust, making them easy to keep clean.

  • Less flavor degradation: Since less heat is generated by friction, there's less risk of degrading the delicate flavor of coffee beans.

  • Less static electricity: Another advantage is that static electricity is less likely to occur, so coffee grounds don't scatter much.

Disadvantages

  • May lack uniformity: Compared to metal, the sharpness is not as high, so the particle size (uniformity of grind) may be slightly inferior.

2. Metal Blades: Uniform Grind and Stable Flavor

Metal blades are often used in high-performance electric grinders.

Advantages

  • Excellent sharpness: Compared to ceramic, the sharpness is superior, and especially high-end grinders can grind coffee beans very uniformly.

  • Stable flavor: Uniformly ground beans lead to less uneven extraction, allowing you to brew consistently delicious coffee.

Disadvantages

  • Difficult to clean: They are susceptible to moisture, so they cannot be washed with water, making cleaning difficult. If water touches them, they will rust and affect the flavor.

  • Durability concerns: Because the blades are sharp, there's a risk of them chipping if foreign objects (such as stones or small metal fragments) are mixed in with the beans.

  • Heat and static electricity: Continuous grinding can generate heat, which may affect the flavor of coffee beans, or static electricity may cause grounds to scatter.

Summary: Grinder Selection Depends on "What You Prioritize"

  • If you prioritize ease of use, cleanliness, and price: Ceramic

  • If you seek the best uniformity and stable flavor: Metal (especially high-performance electric grinders)
