Today, we have important news regarding the behind-the-scenes of our coffee making and our subscription service.

At our shop, we intentionally do not use "large-scale roasters" like those used by major companies. Therefore, we cannot mass-produce by roasting large quantities of beans at once.

"Wouldn't the quality suffer with a small roaster?"

Some of you may be concerned about that, but in fact, it's not the case. What determines the taste and quality of coffee is not the size of the roaster, but the "skill of the roaster."

This time, we will explain in detail why we continue to prioritize small roasters and manual work over efficiency.

【A choice to master "even heat penetration and reproducibility" over efficiency】

The only disadvantage of using a small roaster is that it increases the number of work cycles and time for us, the roasters, many times over.

With large-scale roasters that can load tens of kilograms to several tons of beans at once, it is difficult to distribute heat evenly throughout the internal drum, and it may not be possible to fully address individual differences in beans or slight variations in moisture content due to harvest time.

About Roasting Scale and Uniformity of Heat Transfer

In a small-scale roasting environment, the heat transfer efficiency within the drum and the precision of exhaust control are high, allowing for delicate fine-tuning in response to climatic changes (temperature and humidity). This prevents internal charring (burning) of the beans and immature heat transfer, making it easier to obtain a uniform and clean-tasting extraction. Our artisans meticulously roast each batch, controlling the heat down to a decimal point according to the day's temperature and humidity, using all five senses.

Here lies the technique to bring out 100% of the beans' potential, something that cannot be achieved through full automation or efficiency by machinery.

The reason we don't process large quantities of beans at once isn't just about roasting heat control.

  1. Pre-roast green bean sorting: Moldy beans that pose a risk of mycotoxins, immature beans, and insect-damaged beans are thoroughly removed one by one by the artisan's eyes and hands.

  2. Post-roast sorted beans: Final check and physical removal of unevenly roasted beans, cracked beans, and fragments that could cause burning during roasting.

Furthermore, we ensure proof of mycotoxin non-detection for all lots by a government-certified institution and "shipping within 24 hours of roasting" to maintain maximum freshness.

Those who are highly health-conscious and regularly avoid "the four poisons (wheat, vegetable oil, dairy products, and sweets)" to suppress chronic inflammation in the body are particularly surprised by this "subtractive cleanliness" that eliminates impurities and off-flavors to the absolute limit.
