I'm Kamei, owner of Gokujo Kabi-nashi Coffee.
Today, there are various brewing methods like paper drip, French press, and espresso. However, if you trace back the history of coffee, you'll discover one of the oldest brewing methods.
That is "Turkish coffee," beloved in Turkey and other Middle Eastern countries.
What is the "boiling method," the oldest brewing technique?
Turkish coffee is brewed using a simple method called the "boiling method."
1. Tools Used
A specialized, ladle-shaped tool called an "ibrik" (cezve), made of copper or brass, is used.
2. Brewing Method
The following three ingredients are placed in an ibrik and heated on a stove:
-
Finely ground, dark-roasted coffee beans
-
Water
-
Sugar to taste (spices like cardamom may also be added)
This mixture is heated on the stove, and the process of bringing it to a boil, stirring, bringing it to a boil, and stirring is repeated several times.
3. How to Drink
The boiled coffee is poured directly into a small cup without filtering out the grounds and then consumed. It is customary to leave the coffee grounds that have settled at the bottom of the cup.
This boiling method has been passed down as the oldest brewing method, preserving the form of coffee before it spread globally.
