It's called "nel drip" because it uses cloth (flannel), and it's gaining renewed attention as an eco-friendly drip method that doesn't use paper.

The Appeal of Nel Drip: The Decisive Difference from Paper Drip

Nel (cloth) filters have a coarser mesh than paper filters, so they don't absorb too much of the coffee's oils, allowing them to transfer directly into the brewed liquid.

Nel Drip Basic Recipe and Procedure

【What You'll Need】

• Beans: 16g (medium grind)

• Hot Water: 89℃

• Equipment: Nel filter, nel-specific server, narrow-spout kettle

【Brewing Procedure】

1. Prepare the Filter: Warm the nel filter in hot water beforehand.

2. Steaming (First 30 seconds): Pour a small amount of hot water and let it steam thoroughly for about 30 seconds.

3. Main Extraction: Pour hot water in a thin, steady stream, making sure the "foam mountain" (dome) that forms on the surface doesn't collapse.

   • Tip: During extraction, don't stop pouring for too long. Pour in about 3 continuous stages to extract rich oils without losing them.

4. Completion: Extract a total of 200g of coffee (one mug).

⚠️ Eco-Friendly but High-Maintenance! Nel Filter Storage

The biggest challenge with nel drip is the effort required for maintenance.

• Maintenance: After use, wash it carefully without detergent and always store it in the refrigerator immersed in cold water. If it dries out, the cloth will deteriorate, and the coffee's flavor will be compromised.
