Does coffee mold toxin persist after roasting? Quarantine blind spots and the scientific basis for choosing "tested"

The expectation that "roasting at high temperatures above 200 degrees will burn off all mold and toxins" is actually the biggest misconception when choosing coffee.
While mold fungi themselves are indeed killed, "mold toxins (ochratoxin A)," which are byproducts produced by mold, have an extremely stable chemical structure.
Fact: Decomposition temperature far exceeds 200 degrees
For ochratoxin A (OTA: $C_{20}H_{18}ClNO_{6}$) to be completely decomposed, a much greater amount of heat is required than what is typically achieved during roasting in terms of both temperature and time.
Many peer-reviewed studies (Mancini et al., 2005, etc.) have reported that while OTA is reduced during the roasting process, up to approximately 10-30% of it remains in the beans without disappearing.
The fact that "10% definitely enters the body," rather than "it's fine because it's significantly reduced," is what we, who pursue performance, should be most wary of. This accumulation contributes to brain fog and dulls mitochondrial function.
Quarantine Blind Spots: Why You Shouldn't Overestimate Japan's "Safety"
The claim that "all commercially available beans are mold-free because they pass Japanese quarantine" hides a major practical blind spot.
1. The Inconvenient Truth of "No Standards"
Currently, Japan's Ministry of Health, Labour and Welfare has not set clear permissible limits for ochratoxin A in coffee. In contrast, the EU (European Union) has established very strict upper limits to protect the health of its citizens.
"Distributed in Japan = safe" merely means "does not violate Japan's (lax) standards." We do not settle for domestic standards, but rather impose the world's strictest standards on ourselves.
2. Limitations of Sampling Inspections
Japanese import quarantine does not conduct "full inspections" of all beans, but rather "sampling inspections" where only a portion is extracted.
Contamination caused by "container rain" (condensation) that occurs locally within containers during sea transport does not spread uniformly throughout all the beans in the container. There is a non-zero risk that some burlap bags, unfortunately exposed to condensation, might slip through inspection and enter the market.
"Hand-picking" for taste, "testing" for safety
We often see advertisements claiming "our beans are safe because they are carefully hand-picked (defective beans removed)." However, there is a crucial logical leap here.
Mold toxins are not only found on visibly "moldy beans." Invisible spores and toxins can penetrate even seemingly beautiful beans.

Summary: Should you choose "average" or "ultimate"?
The "safety" indicated by public institutions merely refers to a "level at which most people will not immediately suffer health damage." However, what we want to offer is "noise-free energy" that sharpens the mind and body when consumed.
